It's the first time we've tried this bee hoon, which the SO tar-bao back from this vegetarian stall.
The cabbage had lots of carrots, the pumpkin looked fresh and bright, and the egg (with mushroom) was yummy.
I still don't know how this kind of egg was cooked, perhaps scrambled?
It's not exactly an egg omelette which is more flat and like, pan-fried.
These are like round bits of cooked egg with bits of other ingredients inside and aren't oily - quite common at chye png stalls.
Maybe someone can shed some light, e.g. cook it over low fire, must add water to the egg mixture, etc. ?

Since it is vegetarian, all must be non meat and diary. No milk/cream/butter to be added to the eggs mixture.Could it be blended onions/vege liquids into the eggs mixture and scrambled?
The noodle looks like spaghettini type.

Yes, cat aunty. That's what I thought too when I first saw it...fresh and nice, not with all those fried gluten stuff.
EJ: there are bits of chopped mushrooms in the egg. Actually, I wonder how come this vegetarian stall uses eggs, coz purer vegetarians/vegans don't eat eggs at all, in addition to no spring onions, garlic, onions, etc.
I once tried the vegetarian food in a Johore temple - the vege tasted plain & kind of "flat". It really lacks the "lift" which comes from saute-ed garlic.
Yeah, pure vegetarian food not supposed to add even onions or garlic.
This must be a partial vegetarian stall. still pretty healthy ingredients.
