Party food repeated

Since I didn't get to eat much of the chicken stew and fried bee hoon which I'd cooked for the small party a couple of weeks back, I decided to cook them for dinner today. This time, I remembered to take photos of the results!

Chicken Stew

This time, I added garlic and a bit of oregano.

The potato will thicken the stew so there is no need to add corn flour.

Beef stew is nicer than chicken stew. You should try it. But remember to sear the sides of the beef cubes first together with some butter and bay leaves to lock in the juice. Add an onion or 2 (quartered) too. Can use ready made chicken stock to save trouble also. I use Swenson w/o MSG.

Without the corn starch, the stew was too watery if eaten soon after cooking. However, if you leave it overnight in the fridge, the potatoes alone may just do the trick.

Thanks for the suggestion. I used to eat beef but have given up. :)

Cut some of your potatoes into smaller pieces and they will break up easier compared to the bigger pieces. Cooked over a small fire for around 2 hours, the small pieces will crumble and thicken the stew. I like to eat it with Delifrance baguettes (I can finish 1 baguette myself if no one stops me).
